Reminders went out today for Class #5 which is being held this Saturday, same place, same time. Hope to see you all there.

The first week or two of March is the time when tapping of the trees occurs to start the maple sap harvest. Here is a recipe or two to use up some of that delicious sweet nectar.

Grilled Peameal Bacon recipe from: www.candianliving.com

1/4 cup maple syrup
2 tbsp mustard
1 pinch pepper
1 lb peameal bacon
In small bowl, combine syrup, mustard and pepper; set half aside.
cut bacon into 8 generous 1/4 inch thick slices. Brush 1 side of each with half of the remaining mustard sauce.
In batches, place bacon slices, mustard sauce side down, on greased nonstick grill pan or skillet over medium high heat. Brush slices with remining mustard; grill about 5 minutes or until bottom is browned.
Turn and grill for about 3 minutes or until browned. Seve with reserved mustard mix.


Maple Sweet Potatoesserves 4-6 recipe from: www.almanac.com

4 to 5 medium sweet potatoes, boiled in their jackets
4 to 5 medium apples
1 cup maple syrup
2 to 3 tablespoons butter
Cool, peel, and slice sweet potatoes. Pare and slice apples. Place the maple syrup in a saucepan and add butter and apples. Cook gently until apples are tender. Layer the sweet potatoes and apples in a buttered casserole. Pour sauce-pan juices over them. Just warm in oven or place in refrigerator to use later*.

*To make these extra delicious, run the hot casserole under the broiler long enough to brown the top.
